In a moment of what I can only assume was madness I decided to have my parents over for dinner. For almost a year now we’ve been going to my Mom’s house ever Sunday for dinner but this week I decided it was time to show off my new kitchen floor and cook dinner. Let me start by saying I don’t cook… ever… which has led to everyone assuming I can’t cook. So, once I knew they were coming over I immediately got on my high horse and decided to burden myself with the most work possible – I should have just bought it all.
To start I made vegetable soup which went down a huge treat with everyone, including Aidan who never seems to like anything I cook. Here’s the simplest and tastiest recipe for the whole family to enjoy.
- 1 tablespoon of butter
- 2 potatoes, cubed
- 1 large onion, sliced
- 2 leeks, sliced
- 2 carrots, chopped
- 2 parsnips, chopped
- 1 bunch of celery
- 1.5 litres of vegetable stock
- Salt and Pepper
- Melt the butter in a pot. Fry the potatoes, onion and leeks for 2 minutes. Turn down and leave to steam for 8-10 minutes.
- Add the carrots, parsnips, celery and vegetable stock. Bring to the boil then reduce and allow to simmer for 20-30 minutes.
- Blend to desired consistency and use salt and pepper to taste.
See it’s the easiest recipe and it was delicious! Aidan even ate it again the next day which says a lot. I’m not a fan of celery so in future I would use less but everyone else said to use the whole bunch so I guess it’s a personal preference thing. If you do make this be sure to let me know how it goes.
